Pumpkin soup with a toast-spider coated in smashed pumkin seeds in a cream-net
Soo, and heres the recipe, should be enough for about 4 portions
You'll need: 1 Pumkin (about 750 gr pulp) (best works hokkaido) about 1l vegtable stock (selfmade or bought) 1 onion a bit oil to fry salt pepper red hot curry
Optional: bagutte to dip in pumkin seeds for decorating
How to: Peel the Pumkin if needed ( i also like to peel hokkaido, but it isn't a must have). Cut the pulp in pieces of about 5 cm. Peel the onion and cut it roughly. Fry the onion and the pumpkin with a bit hot oil in a big pot for a few minutes till it gets brown. Deglaze with the vegtable stock ( should cover the pumpkin completly). Let it boil for about 15 min till you are able to sqash the pumpkin easyly. Mix it with a hand-held blender ( in case you don't have one you can use a normal blender too) till no pumpkin pieces are left and you have a liquid-creamy consistence ( if it is too viscous just add more water or vegtable stock). Spice it with salt, pepper and red hot curry till it hits your taste ( that could be a lot of the spices ) . In the end serve it with the baguette and put some pumkin seeds over the soup.
I don't recommend blending the seed because it tastes a lot better with the hole ones. Also you can use any bread to serve, but i think baguette matches the best
